  1. 1 ¼ cups rice flour
  2. ½ tsp each: baking soda, baking powder & salt
  3. ½ cup chunky peanut butter
  4. ¼ cup Earth Balance coconut peanut butter spread
  5. ½ cup butter
  6. 1/3 cup brown sugar
  7. 1/3 cup organic sugar, plus more for rolling
  8. 1 egg
  9. 1 tsp vanilla
  1. Combine flour, soda, baking powder and salt in a small bowl.
  2. Cream together peanut butter and butter.
  3. Add sugars and beat until light and fluffy.
  4. Add egg and vanilla and stir to combine.
  5. Slowly add dry ingredients.
  6. Scoop 1 Tbsp of dough at a time and shape into a ball.
  7. Roll in sugar and place 2 inches apart on a parchment-lined baking dish.
  8. Bake at 350° for 8-10 minutes.
