Pork Medallions with Brandy Cream Sauce

  1. 3-3 ½ # boneless pork loin roast or leg roast
  2. Freshly ground black pepper to taste
  3. 1/3 cup chicken broth (or vegetable broth)
  4. 1 Tbsp chopped green onion
  5. ¼ cup whipping cream
  6. ¼ cup brandy
  7. ½ cup butter, cut into small pieces
  8. 1 Tbsp lemon juice
  9. ¼ tsp salt
  10. 1/8 tsp white pepper
  11. Parsley for garnish
  1. Rub pork roast with black pepper.
  2. Place on a rack in a shallow baking pan.
  3. Roast at 325° until meat reaches 160° (allow 26-31 minutes per pound)
  4. Meanwhile, in a medium saucepan combine broth and green onion.
  5. Bring to boil; reduce heat.
  6. Cover and simmer 2 minutes.
  7. Remove from heat and add whipping cream and brandy.
  8. Simmer, uncovered, over medium heat 10 minutes or until sauce is reduced to 1/3 cup.
  9. Add butter, one piece at a time, stirring constantly with wire whisk.
  10. Stir in lemon juice, salt and white pepper.
  11. To serve, slice meat across the grain into ½” slices.
  12. Serve with sauce on the side or poured over meat platter.
