Crust
  1. 1 cup sprouted spelt flour
  2. ¼ cup hazelnuts
  3. ¼ cup butter
  4. 1/8 tsp salt
  5. 1 Tbsp turbinado
  6. ½ tsp cinnamon
Cream Cheese Filling
  1. 8 oz. Nancy’s cream cheese
  2. ½ cup yogurt
  3. ¼ cup honey
  4. 1 tsp vanilla.
Berry Glaze
  1. ¾ cup water
  2. 1 Tbsp tapioca flour
  3. ¼ tsp salt
  4. ½ cup berries
Crust Directions
  1. Combine all ingredients in a food processor and pulse until chunky.
  2. Add cold water by tablespoon, running mixer between each one, until dough forms.
  3. Transfer to pie pan and press to the edges for an even crust.
  4. Cover with foil and beans to prevent bubbles.
  5. Bake at 400° for 10 minutes or until lightly browned.
  6. Cool and fill with cream cheese filling and berry glaze (see directions below).
Berry Glaze Directions
  1. Bring mixture to a boil.
  2. Simmer until glaze becomes clear.
  3. Remove from heat and cool.
Cream Cheese Filling Directions
  1. Blend filling ingredients with a hand mixer until fluffy.
To assemble
  1. Gently spread cream cheese filling over bottom of cooled pie shell.
  2. Top with berries and finish with glaze.
  3. Chill for 1 hour before serving.
