Blueberry Sorbet

Blueberry bliss in a bowl! This sweet, refreshing dessert is the perfect finale to a lovely summer meal. Blueberries are packed with healthy antioxidants and this dessert features them well without adding a lot of fattening ingredients, so you could think of it as a health food of sorts. Light and lovely, it is simple to make and a delight to consume!

  • 4 cups fresh blueberries
  • 3/4 – 1 cup sugar
  • 1 cup water
  • 2 Tbsp lemon juice
  • 1/8 tsp salt


Heat sugar, water and salt¬† until sugar is dissolved. Add lemon juice and stir. Puree’ mixture with blueberries in blender or food processor, until smooth. Freeze overnight in a 9×13 glass casserole dish. Thaw slightly, break into large pieces and put a few pieces at a time into a food processor. Pulse processor until sorbet reaches your desired consistency.¬† Scoop out and serve!
