Cornbread with Honey Butter

Pancake mix gives this cornbread an extra lift. Light, fluffy and just hint of sweetness, this cornbread goes great with just about any meal. In particular, try it with Bodacious Bean Blend or Southwestern Pork Chili. Don’t forget the honey butter for a divinely delicious cornbread experience.

Cornbread Ingredients

  • 1 cup pancake and baking mix (can be gluten free or not)
  • 1 cup yellow cornmeal
  • 1 Tbsp baking powder (increase to 2 Tbsp if using gluten free mix)
  • 2 eggs
  • 1 cup milk (or non-dairy milk)
  • 1/3 cup honey
  • ¼ cup butter, melted (or non-dairy butter)

Honey Butter Ingredients

  • ½ cup butter
  • ¼ cup honey

Instructions:

Stir dry ingredients together. Beat eggs until blended. Stir in milk, honey and butter. Pour into dry ingredients. Mix until moist. Pour into a greased 8”x8” pan. Bake at 375°F for 25-30 minutes.  For the honey butter, combine butter and honey, beating with an electric mixer until fluffy. Serve with cooled cornbread.
