Ingredients
  1. ½ cup Jasmine rice
  2. 1 ¼ cups water
  3. ½ cups chopped fresh veggies (carrot, green beans, snap peas)
  4. ½ green onion
  5. ½ cup cubed thick-cut ham (in deli or meat case)
  6. 1 ½ tsp olive oil
  7. 2 tsp soy sauce or tamari
  8. 1 egg
Instructions
  1. Put all ingredients in a microwave safe bowl. Stir & cover.
  2. Microwave on high for 5 minutes and stir. Microwave
  3. for 5 more minutes and stir. Repeat this process until rice is cooked. Let sit for 3 minutes.
  4. Whisk egg in a bowl and microwave for 20 seconds.
  5. Cut up egg a bit, cook for 10 more seconds, cut some
  6. more, and cook for 8 more seconds.
  7. Add egg to rice mixture and stir. Serve with additional soy
  8. sauce if desired.
