Gluten Free Almond Cookies

Gluten Free doesn’t have to mean cookie-free! Everyone, regardless of their diet, deserves a cookie now and again. These tasty little indulgences, which come to us from Dr. Virginia Shapiro, of Integrity Natural Health in Corvallis are so delicious, you won’t miss the wheat flour. In addition to being made without wheat and without cane sugar, these cookies are also chock full of nutritious almonds. A type of tree nut, almonds are packed with heart-healthy fats, fiber, and vitamin E, which may help reduce chances of heart disease and some forms of cancer. Why, you deserve a cookie for eating so well!

  • 1 ½ cups raw, organic almonds
  • ¼ tsp sea salt
  • ½ tsp baking powder
  • ¼ cup maple syrup

Instructions:

Process almonds in a food processor until well ground and creamy. Add salt, baking powder and maple syrup. Process until a ball of dough forms in the processor. Form dough into 1″ balls, place on a parchment-covered baking sheet and flatten slightly. Bake at 350° F about 10-13 minutes. Transfer to a wire rack to cool.
