Homemade Bean Chili

A perfect recipe for the start of fall. Beans are a great protein substitute and this recipe makes for a hearty dinner for four.

  1. 1 Tbsp. olive oil
  2. 1/2-1 yellow onion, chopped
  3. 1 sweet pepper, chopped
  4. 1 can corn, drained
  5. 2 cans Field Day beans, drained
  6. 1 can diced tomatoes
  7. 2 tomatoes, chopped
  8. 1 tsp.-1 Tbsp. cayenne
  9. 1 Tbsp. cumin
  10. 1 tsp.-1 Tbsp. bulk Mexican seasoning
  11. 1/2 bunch cilantro, chopped
  12. Salt to taste
  13. *optional addition: cooked ground beef or chopped tempeh
  1. In a saucepan, saute onion and pepper in olive oil until onion is clear
  2. In a medium pot, add the corn, beans and tomatoes
  3. Add sauteed vegetables to the pot
  4. Stir in all of the seasonings
  5. Cook on low-medium heat for 15 mins., stirring occasionally.
  6. Serve in bowls and top with fresh cilantro
  7. Enjoy with Carmen's Tortilla chips or homemade corn bread.
