Irish Stout Beef Stew

Beer is a surprisingly flavorful addition to many dishes, and of course you can’t skip having a potato dish on your menu when you have Ireland and St. Patrick’s Day on your mind!

Irish Stout Beef Stew

  1. 2 Tbsp olive oil
  2. 3 bay leaves
  3. 2 lb. stew meat, cut into bite-sized pieces
  4. 1 large yellow onion, peeled and cut into ¼” slices
  5. 2 cloves garlic, peeled and chopped
  6. 1 Tbsp fresh thyme leaves
  7. 1 Tbsp fresh rosemary
  8. 3 Tbsp Sans Gluten SVP flour
  9. ¾ cup beef stock
  10. ½ cup Harvester Brewery Gluten Free Dark Ale
  11. 1 Tbsp chopped parsley
  12. ½ lb. carrots, sliced
Stew Directions
  1. In a large oven proof pot, heat oil
  2. Add bay leaves and cook for 1 minute
  3. Add meat and brown on all sides on high heat.*
  4. Add sliced onion and cook until it is transparent
  5. Reduce heat to low and add garlic, thyme, rosemary and flour; stir well until smooth
  6. Add beef stock and beer; simmer, stirring, until the stew thickens a bit
  7. Add the remaining ingredients and cover
  8. Place the pot in a 275° oven for 3 hours, stirring every 45 minutes
  9. Salt and freshly ground black pepper to taste
*To make a vegetarian stew substitute
  1. ½ lb. crimini mushrooms
  2. ¼ lb. shiitake mushrooms, sliced,
  3. tofu cut into cubes and browned in oil
  4. vegetable stock
  5. follow similar directions as the beef version.
