Lemon Baked Tofu with Brandy Cream Sauce

Baked Tofu
  1. 2 blocks firm or extra-firm tofu, well pressed
  2. 2 Tbsp soy sauce
  3. 2 Tbsp lemon juice
  4. 2 Tbsp olive oil
  5. 2 Tbsp Dijon mustard
  6. 1 tsp sugar
  7. 1 tsp basil
  8. 1 tsp thyme
  9. salt and pepper to taste
Brandy Cream Sauce
  1. 1/3 cup vegetable broth
  2. 1 Tbsp chopped green onion
  3. ¼ cup whipping cream
  4. ¼ cup brandy
  5. ½ cup butter, cut into small pieces
  6. 1 Tbsp lemon juice
  7. ¼ tsp salt
  8. 1/8 tsp white pepper
  9. Parsley for garnish
Tofu Directions
  1. Slice pressed tofu into 1/2 inch thick strips.
  2. Whisk together all ingredients except tofu.
  3. Transfer dressing to a shallow pan and add tofu, coating well.
  4. Allow tofu to marinate for at least 1 hour (the longer the better!), turning to coat well with marinade.
  5. Heat oven to 375° F.
  6. Transfer tofu and marinade to baking dish and bake for 20-25 minutes, turning halfway through.
  7. Remove from oven and place tofu in hot skillet, with any marinade remaining in the baking dish.
  8. Brown to desired finish, turn and brown.
  9. Serve with Brandy Cream Sauce over top.
Cream Sauce Directions
  1. In a medium saucepan combine broth and green onion.
  2. Bring to boil then reduce heat and cover and simmer 2 minutes.
  3. Remove from heat and add whipping cream and brandy.
  4. Simmer, uncovered, over medium heat 10 minutes or until sauce is reduced to 1/3 cup.
  5. Add butter, one piece at a time, stirring constantly with wire whisk.
  6. Stir in lemon juice, salt and white pepper.
