Marinated Cucumbers

Fresh, crisp cucumber stars in this simple salad. A simple, light dressing allows the cucumber flavor to shine. The dressing amount will seem small, but the salt will pull liquid from the cukes and increase the amount of dressing, in the end. You may also like to try a variation on this salad using sesame oil and toasted sesame seeds. Stay cool as a cucumber with this delicious and simple salad. Great as a side dish for barbecue, tacos or pasta.

Co-op Sales Organic English Cucumber
  • 2 medium cucumbers
  • 1 tsp tamari
  • 1 Tbsp white wine vinegar
  • 1 Tbsp sugar
  • 2 tsp olive oil
  • ¼ tsp chipotle hot sauce
  • ½ tsp sea salt

Instructions:

Peel cucumbers and cut them lengthwise in two. Scrape seeds out of each half, leaving hollow shells. Cut cukes crosswise into ¼” slices. Combine all remaining ingredients and mix well. Pour over cucumbers. Toss to coat each slice thoroughly with the dressing. Chill slightly before serving.
