DAY 3: Basil Cheddar Frittata, Veggie Burger Patties, Fruit Salad

Basil Cheddar Frittata

  • 2 Tbsp olive oil

  • 1 large onion, diced

  • 2 cloves garlic, minced

  • 2 zucchini, diced

  • 2 medium potatoes, set aside from Classic Potato Salad, diced

  • 4 eggs

  • 1 tsp basil

  • 1 cup grated cheddar

  • Sea salt and pepper to taste

Instructions

Heat oil in a 10” skillet. Sauté onion & garlic 3 minutes.  Add zucchini and cook until just tender.  Add potatoes and sauté briefly.  Beat eggs with remaining ingredients.  Spread vegetable mixture evenly over bottom of skillet; pour eggs over top.  Cook until bottom is golden and eggs are set, 8-10 minutes.  Slide out onto a baking sheet and place under broiler.  Broil until golden, about 2 minutes.

Make fruit salad using 1 orange, 1 peach, 1 apple & 1 pt strawberries.

Reheat veggie burger patties in skillet or microwave and serve as a side.
