DAY 4: Beans & Taters Hot Dish, Roasted Cauliflower & Green Salad

Beans & Taters Hot Dish

  • 2 cans baked beans
  • 2 Tbsp ketchup

  • 1 Tbsp brown sugar

  • 1 Tbsp yellow mustard

  • ½ cup carrot, grated

  • 1 bag Cascadian Farms Spud Puppies

Instructions

Preheat oven to 350°. In an 8×8″ casserole dish, mix together all ingredients except potato puffs. Pack puffs close together across the top of the dish. Bake, uncovered, 1 hour.

Roasted Cauliflower & Green Salad

  • ½ head cauliflower, chopped

  • 2-3 Tbsp olive oil

  • ¼ tsp dill weed

Instructions

Preheat oven to 350°F. Place cauliflower in a large mixing bowl; add remaining ingredients and toss to coat. Transfer to baking sheet and bake 15-20 minutes or until tender-crisp. Serve with Green Salad (from Day 1.)
