Celebration Cupcake Cones

A playful twist on birthday or other celebration cupcakes. Get the kids involved in making them!

Cupcakes

  • 1 ½ cups all-purpose flour

  • ¾ cup cocoa powder

  • 1 ½ tsp baking soda
  • ¾ tsp baking powder
  • ¾ tsp sea salt
  • 1 cup pure maple syrup
  • 1 cup Greek yogurt

  • 2 eggs
  • ¼ cup olive oil

  • 1 tsp vanilla extract
  • 20 cake cones

Frosting

  • ¼ cup melted butter

  • ½ cup cocoa powder

  • ¼ tsp sea salt
  • 1/3 cup milk

  • 1 ½ tsp vanilla extract

  • 3 ½ cups powdered sugar

Instructions

Preheat oven to 350°F. Sit ice cream cones into muffin pans. In a large mixing bowl, whisk together flour, cocoa powder, baking soda, baking powder and salt. In a large measuring cup whisk together the syrup, yogurt, eggs, oil, and vanilla. Pour the wet ingredients into the dry. Beat with a mixer until smooth and thick, about 1 minute. Pour or spoon batter into ice cream cones, about 2/3 full. Bake until a toothpick comes out clean, 25-28 minutes. Trim extra cake from sides of cupcakes if needed.

To make frosting, combine melted butter, cocoa, and salt; add milk and vanilla. Mix in sugar in 3 parts. Mix until smooth and creamy. Frost cupcakes only when they have completely cooled. These cupcakes look especially pretty topped with sprinkles and a cherry!
