Kale Caesar Salad

Superfoods that taste super together! This fully plant-based Caesar-style salad features kale and hemp seeds with a deliciously light lemon-based dressing.

  • 1 cup raw cashews

  • 1 tsp Dijon mustard

  • ½ tsp sea salt

  • 1/8 tsp black pepper

  • 8 cloves garlic

  • 4 tsp capers

  • 2 tbsp brine from capers

  • 6 Tbsp lemon juice

  • 4 Tbsp olive oil

  • ½ cup warm water

  • 1 tsp vegan Worcestershire sauce

  • 1 tsp maple syrup

  • 2 bunches lacinato or curly kale, chopped

  • 1 Tbsp olive oil

  • 1 Tbsp lemon juice

  • ¼ cup VioLife vegan “Parmesan”

  • 2 Tbsp hemp seeds, optional


Soak raw cashews 1 hour in hot water or overnight in cool water. Drain cashews, then place all dressing ingredients in a high-speed blender. Blend until creamy and smooth. Add water to thin until pourable, if needed.

Place chopped kale in a large mixing bowl. Drizzle with olive oil and lemon juice. Massage by hand to soften the kale. Add desired amount of dressing, Parmesan cheese and hemp seeds. Toss to coat and serve immediately.
