Spinach, Apple, and Pecan Salad

Great tasting and ever-so-simple spinach salad with a zingy Dijon dressing.

  • 6 cups fresh spinach leaves, torn into bite-sized pieces

  • 2 medium Granny Smith apples

  • ¾ cup pecan halves, broken

  • 5 Tbsp olive oil

  • 2 Tbsp Dijon mustard

  • 2 Tbsp maple syrup

  • 1 ½ Tbsp lemon juice

Instructions

Core apples, cut into wedges, then cut wedges into thirds. Toss spinach, apples and pecans in a large bowl. In a small bowl whisk together olive oil, mustard, maple syrup and lemon juice. Pour dressing over salad; toss to coat and serve immediately.
