Ingredients
  1. 1 medium rutabaga, peeled and cubed
  2. 1 small sweet potato, peeled and cubed
  3. 1 large parsnip, peeled and cubed
  4. 1 small beet, cubed
  5. 2 carrots, cubed
  6. 2 Tbsp olive oil
  7. 1 tsp total. of optional spices of your choice. Try combinations which include onion, garlic powder, cayenne, pepper, rosemary, sage, curry blends, jerk seasoning etc.
  8. salt to taste
Instructions
  1. Heat oven to 375.
  2. Toss roots with oil and optional spices until evenly coated.
  3. Sprinkle with salt. Spread in one layer in a large roasting pan.
  4. Bake for 20 min.
  5. Stir.
  6. Bake 20 min more or until roots are tender.
Notes
  1. Great for a potluck or holiday side dish!
