Veggie Kabobs and Basil Aioli

Veggie Kabob Ingredients:

  • ½ cup cherry tomatoes
  • ½ red bell pepper, cut into chunks
  • ½ sweet onion, cut into chunks
  • 1 zucchini, cut into diagonal chunks
  • ½ pkg tempeh, cut into chunks
  • ¼ cup olive oil
  • 2 Tbsp balsamic vinegar
  • Salt & pepper to taste

Basil Aioli Ingredients:

  • ½ cup fresh basil leaves
  • ¼ cup mayonnaise
  • 2 Tbsp grated Parmesan cheese
  • 1 Tbsp chopped almonds
  • 1 cloves garlic
  • ½ Tbsp fresh lemon juice

Veggie Kabob Instructions:

Place all ingredients in sealable container. Shake container throughly to coat. While grill heats, soak 6 skewers in water. Load skewers and grill over medium heat, turning after 5-6 minutes. Cook to desired finish.

Basil Aioli Instructions:

Place all ingredients in food processor. Process until smooth. Serve with skewers, also great with sweet corn and bread.
