Banana Rice Muffins
Ingredients:
- 1 ½ cups brown rice flour
- ¼ cup coconut sugar
- 1 tsp ground cinnamon
- 1 tsp baking soda
- ¼ tsp sea salt
- 4-5 mashed ripe bananas (2 cups)
- ½ cup melted coconut oil
- 2 tsp apple cider vinegar
- 1-2 Tbsp water, if needed
- 12 cupcake liners

Instructions:
Preheat oven to 350°F. Place liners in each cup in a muffin tin. Whisk dry ingredients together in a mixing bowl. In a separate bowl, mix bananas, coconut oil, and vinegar. Pour wet ingredients over dry and mix.Add water as needed to make a thick batter. Divide between 12 muffin cups.Bake 20-25 minutes. Remove muffins from tin and cool on a wire rack. Set aside half for Day 5.
