BBQ Beef Potatoes
Grass-fed BBQ beef on an organic baked potato. This is an easy meal that will satisfy the whole family. The recipe also works great as a way to use leftover roast beef (just saute the onions & garlic in oil before adding the cooked beef and seasonings.) Consider a simple vegetable side like a salad or some steamed veggies to go with this hearty meat & potato dish.
- 2 large russet potatoes
- ½# ground beef or substitute
- 1 clove garlic, minced
- ¼ onion, diced
- ¼ cup ketchup
- 1 ½ tsp brown sugar
- 1 ½ tsp white vinegar
- ⅛ tsp garlic powder
- ¼ tsp smoked salt
- 1 ½ tsp tamari
- 1 ½ tsp lemon juice
Instructions:
Wash and prick potatoes. Bake at 350°F about 75 minutes or until tender. Cook ground beef, onion and garlic, breaking beef up, until beef is browned. Add remaining ingredients, simmer 20-30 minutes. Serve over split potatoes.
