Beef Vegetable Soup
So simple and so hearty! You may add any leftover veggies, rice, cooked pasta and even leftover gravy to the soup. Use what you have on hand to make the best use of the food you have and to save money.
- ½# cooked beef roast, diced
- 1 – 15 oz can diced tomatoes
- ¼ onion, diced
- 2 carrots, sliced
- 2 potatoes, chopped
- 1 stick celery, chopped
- 1 stalk broccoli, chopped
- ½ cup green beans, chopped
- 1 quart beef broth
- Salt & pepper to taste
Instructions:
Mix all ingredients in a soup pot and bring to a boil. Reduce heat, cover and simmer for 30-45 minutes.
