Black Bean Burger
Ingredients:
- 1 can black beans, drained and rinsed
- 2 oz crimini mushrooms, diced
- 2 green onions, sliced
- 1 clove garlic, minced
- 2 Tbsp roasted red peppers, chopped
- ½ tsp ground cumin
- ½ tsp ground coriander
- ½ tsp chili powder
- ¼ tsp salt
- 1 Tbsp cilantro, chopped
- 1 Tbsp flour
- 1 Tbsp olive oil
- 4 lettuce leaves or buns, for serving
- Condiments, as desired
Instructions:
Mash beans and add remaining ingredients, except olive oil, lettuce, and condiments. Form into 4 patties. Heat olive oil in a skillet, and brown patties on both sides. Serve on a lettuce leaf or burger bun, topped with your choice of condiments. Great with a side salad and your favorite chips!
