Chilled Gazpacho

Ingredients:

  • 3 tomatoes, chopped (5-6 cups)
  • 1/3 cup red onion, finely chopped
  • 1 cup cucumber, peeled and chopped
  • 2/3 red bell pepper, chopped
  • 1 stick celery, chopped
  • 1 Tbsp chopped fresh parsley
  • 1 Tbsp chopped fresh chives
  • 1 clove garlic, minced
  • 2 Tbsp red wine vinegar
  • 2 Tbsp olive oil
  • 1½ tsp lemon juice
  • 1 cup tomato juice
  • ½ tsp sea salt
  • Black pepper to taste
  • Hot sauce (optional)

Instructions:

Blend half or more soup to desired texture. Add back to glass bowl and stir.Adjust seasonings to taste. Chill several hours to allow the flavors to blend.
