Herbed Veggie Orzo
Ingredients:
- 6-8 cups water
- 1 cup orzo
- ½ can black beans, drained and rinsed
- ½ red bell pepper
- 1 yam, diced & roasted
- ½ cup chopped fresh herbs, mixed (oregano, basil, sage)
- 1 cup chopped fresh parsley
- 2 Tbsp olive oil, divided
- ½ tsp sea salt
- Ground black pepper to taste
- Shredded Parmesan cheese to taste (optional)
- Sliced avocado (optional)
Instructions:
Bring water to a boil and stir in the orzo. Cook about 7 minutes, until al dente. Drain and return to pan. In the meantime, place herbs, 1 Tbsp oil, and salt in a small bowl. To the orzo, add black beans, roasted yams, and herbs and heat. Stir in red bell pepper. Drizzle with remaining olive oil and top with shredded Parmesan or sliced avocado. Equally delicious served warm or chilled as a salad.
