Jackfruit Tacos with Mango Avocado Salsa
Seasoning Ingredients:
- ¾ tsp onion powder
- ½ tsp paprika
- 1/8 tsp black pepper
- ½ tsp dried thyme
- ¼ tsp ground allspice
- ¼ tsp ground cumin
- Dash of cayenne pepper
- 1/8 tsp ground cinnamon
- 1/8 tsp nutmeg
Salsa Ingredients:
- 1 mango, peeled and diced
- ½ ripe avocado, diced
- 2 Tbsp diced red onion
- ¼ cup diced cucumber
- 2 Tbsp fresh orange juice
- 1 ½ Tbsp fresh lime juice
- ¼ cup cilantro, finely chopped
- Sea salt to taste
Taco Ingredients:
- 1 (14 oz) can jackfruit
- 1 Tbsp olive oil
- 3 green onions, sliced
- 2 garlic cloves, minced
- ¾ – inch piece fresh ginger, grated
- ½ jalapeño pepper, minced
- 1 Tbsp maple syrup
- 1 tsp tomato paste
- 2 Tbsp tamari
- 1 ½ Tbsp fresh lime juice
- 6-8 corn tortillas
Instructions:
Jerk Seasoning Blend – Combine all spices together in a small bowl and mix well to blend. This blend will be used to season the jackfruit.
Mango Avocado Salsa – Combine all ingredients in a medium bowl, and mix gently. Refrigerate until ready to serve.
Jackfruit Tacos – Drain the jackfruit and lightly rinse, shaking off excess water. Use your fingers to remove any thick cores and pull the pieces apart so that it resembles shredded pork. In a large pot, heat oil over medium heat. Add green onions and cook 1-2 minutes. Add garlic, ginger, and jalapeño. Cook for 1 minute, stirring frequently. Add all of the Jamaican Jerk Seasoning, stir to coat, and cook for 30 seconds, stirring constantly. Add shredded jackfruit, maple syrup, tomato paste, tamari, and lime juice. Stir well. Pour in ¼ cup water and mix again. Cover and cook 20 minutes, stirring occasionally. Serve jackfruit inside warmed tortillas with Mango Avocado Salsa.
