Mashed Potato Pancakes
A tasty way to use up leftover mashed potatoes. Did you overestimate how many potatoes to mash this Thanksgiving? These pancakes are great for breakfast or as a side dish. Ketchup is, of course, a classic choice for dipping, but feel free to get creative with your choice of sauces! Consider applesauce, sour cream, chutney, or Yumm! sauce.
- 3 Tbsp onion, finely chopped
- 1/3 cup butter, divided
- 4 cups mashed potatoes
- 2 eggs
- ½ cup flour
- 1/8 tsp garlic powder
Instructions:
Sauté onion in 1 Tbsp butter, until onion is translucent. Remove onion from skillet with a slotted spoon, allowing the drippings to remain. Combine onion, cold mashed potatoes and egg. Sprinkle with flour and stir. Add 1 Tbsp butter to skillet and spoon potato mixture into pan, making pancakes of your desired size. Cook about 5 minutes on each side, until browned. Add more butter as needed to cook rest of potatoes. Serve with ketchup or Yumm! Sauce.
