  • ½ onion, peeled and chopped
  • 1 clove garlic
  • 1 Tbsp olive oil
  • ¼ # green lentils
  • ½ # white sweet potato, peeled and cubed
  • 1 tsp ground cumin
  • ½ tsp salt
  • ¼ tsp chile powder
  • 2 ½ cups hot water mixed with 2-3 Tbsp vegetable broth powder
  • 3-4 leaves curly green kale, chopped, with large center rib removed
  • ¼ cup raisins
  • 1 cup cooked brown rice

Heat a large, heavy saucepan over medium heat. Add oil, onion and garlic. Cook, stirring frequently 2-3 minutes, or until onion is soft. Add cumin, salt and chile powder and cook 1 minute, until fragrant. Add broth and lentils. Bring mixture to a boil. Reduce heat, cover and simmer 10-15 minutes. Add sweet potatoes and kale and cook an additional 15-20 minutes until lentils and sweet potatoes are tender. Add water in small amounts, as necessary, during the cooking process. Stir in raisins. Serve over brown rice.
