Peach and Corn Salsa
Ingredients:
- 1 ear sweet corn kernels
- 2 large ripe peaches, diced
- ¼ small red onion, diced
- 1 small jalapeño, finely diced, seeds and veins removed
- ¼ cup cilantro, chopped
- 2 Tbsp lime juice
- Sea salt to taste
Instructions:
Mix all ingredients in a small glass bowl. Store in refrigerator. Serve with tortilla chips or also great atop fish tacos.
