Apricot Glazed Chicken

This delicious dish features a sweet and savory sauce made with marmalade and dried apricots, figs, and currants. Works great as a vegan meal also by using tofu instead of chicken!

  • 3 Tbsp olive oil

  • 8 boneless chicken breasts halves, skinned or 2 blocks tofu, cubed

  • ¼ cup dried mission figs, cut into ¼” cubes

  • ½ cup dried currants

  • 1 cup St. Dalfour Ginger & Orange Marmalade

  • 1 cup orange juice

  • 1 cup dried apricots halves, cut into quarters

Instructions

Cut chicken breasts crosswise into ¾” slices. In large skillet, heat olive oil. Add chicken strips (or tofu cubes) and cook over medium high heat, stirring occasionally, until chicken is browned, 10-15 minutes. Stir in all remaining ingredients. Continue cooking for 6-8 minutes, stirring occasionally. Serve over rice.
