Tender greens, crunchy cabbage, tart apples, sweet dried figs, and toasted walnuts & pumpkin seeds make a delicious, colorful fall salad.
8 cups mixed salad greens
1-2 cups finely sliced red cabbage
1 green apple, diced
6 dried black mission figs, cut in quarters
1/2 cup dried currants
3 green onions, sliced
1/2 cup walnuts, toasted
1/2 cup pumpkin seeds, toasted
4 Tbsp olive oil
3 Tbsp balsamic vinegar
1 Tbsp Dijon mustard
1/4 tsp sea salt
1. Place all vegetables, fruit & nuts in a mixing bowl and toss.
2. Mix oil, vinegar, maple syrup, mustard, and salt by shaking them in a jar with a tight-fitting lid.
3. Pour dressing over salad and gently toss to coat.
4. Serve immediately.
