Banana Pancakes

Didn’t manage to eat all your bananas in time? Turn that banana frown upside down with banana pancakes!

  • 1-1/2 cups all purpose flour

  • 1 tsp. cinnamon

  • 1/4 tsp. fresh-grated nutmeg

  • 2-1/2 tsp. baking powder

  • 1/2 tsp. salt

  • 1 over-ripe banana, peeled (the browner, the better)

  • 2 large eggs

  • 1 1/4 cup milk

  • 1/2 tsp. vanilla extract

Instructions

Combine flour, cinnamon, nutmeg, baking powder and salt. In a separate bowl, mix together egg, milk, and bananas.

Stir flour mixture into banana mixture; batter will be slightly lumpy.

Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Cook until pancakes are golden brown on both sides; serve hot.
