DAY 1: Beef Fold-overs, Roasted Broccoli, Fried Apples

Beef Fold-overs

  • ½# ground beef

  • ½ onion, chopped

  • ¼ cup green pepper, chopped

  • 4 oz tomato sauce

  • ½ tsp sea salt

  • 1/8 tsp oregano

  • 1/8 tsp black pepper

  • 1 (8 oz) can refrigerator biscuits

Instructions

Heat oven to 400° F. Brown ground beef; add onion and green pepper; saute until onion is translucent. Add tomato sauce and seasonings; heat through. Separate biscuits and roll out on a floured board, one at a time, into S” circles. Place a slight ¼ cup of the beef mixture on each round. Fold over, wet edge with finger dipped in water, and press together to seal. Place on a parchment-lined baking sheet and bake for 16-18 minutes, or until nicely browned.

Roasted Broccoli

  • 2 stalks broccoli

  • Olive oil

  • Salt & pepper

Instructions

Preheat oven to 450° F. Cut florets off broccoli stalks. Cut approximately 1″ off end of stem. Peel off outer layer of remaining stem and chop into ¾” – 1″ slices. Place broccoli florets and stems on cookie sheet. Spray with olive oil, sprinkle with salt & pepper and place in oven. Roast 10-15 minutes or to desired finish.

Fried Apples

  • 2 apples

  • 2 Tbsp maple syrup

  • 2 Tbsp butter

  • ¼ tsp cinnamon

Instructions

Core apples and cut into¾” slices. Melt butter in skillet; add apple slices, maple syrup and cinnamon. Cook over med-low heat, stirring occasionally, until apples are tender. Serve hot.
