DAY 1: BLT Wraps, Oven Garnet Yam Fries, Apple Slices

BLT Wraps

  • flour tortillas
  • 6 slices bacon

  • ½ pt cherry tomatoes, halved

  • Shredded lettuce

  • Mayonnaise

Instructions

Fry or bake bacon to desired finish; drain. Spread mayonnaise on tortillas. Divide bacon, tomatoes and lettuce between tortillas. Roll up and serve.

Garnet Yam Oven Fries

  • 2 garnet yams, peeled and cut into ¼” fries

  • 1 Tbsp oil

  • ½ tsp sea salt

  • 1/8 tsp ground black pepper

  • ½ tsp smoked paprika

Instructions

Heat oven to 450°F. Line a baking sheet with parchment paper. Toss together sweet potatoes, oil, salt, pepper and paprika. Arrange in single layer on prepared baking sheet. Bake 10 minutes. Turn potatoes and bake 12 minutes more, or until golden brown. Fries are delicious served with Yumm! Sauce.

Save for later: ½ pt cherry tomatoes for Fresh Tomato Alfredo, 6 tortillas for Cheese Tortillas on Day 5, lettuce for green salad on Day 3, Stuffed Tomatoes, Pear Hazelnut Salad and Chicken Ensalada, 3-4 slices bacon for Fresh Tomato Alfredo

Tip: To halve cherry tomatoes, place several between 2 plates or container lids and slice through horizontally.
