Cardamom Poached Quince

The sweet floral and honey tones of the quince are enhanced by citrus and cardamom. Also great with a dollop of cream!

  • 2# quince

  • 1 Tbsp lemon juice

  • 6 cups water

  • 2 cups sugar

  • 4 lemon slices (¼” thick)

  • 4 orange slices (¼” thick)

  • 6 green cardamom pods, crushed

Instructions

1. Stir lemon juice into a large bowl of water.
2. Quince will be very firm even when ripe. Peel, quarter and core quince. Place in lemon water as you cut them.
3. Bring 6 cups water, sugar, citrus slices and cardamom pods to a simmer, stirring until sugar has dissolved.
4. Cut quince quarters into ¼” thick slices and add to syrup. Return to a simmer.
5. Lay a round of parchment paper on top of syrup, dipping edges down into water to keep the paper from rolling up.
6. Simmer until quince is tender, 30-40 minutes. Discard citrus slices.
7. Cool quince in syrup to room temperature about 1 hour, allowing the color to deepen. Discard cardamom pods.
