DAY 6: Cauliflower Fried "Rice," Fresh Veggies, Stuffed Delicata Squash Filling

Cauliflower Fried “Rice”

  • 1 medium head cauliflower, chopped

  • 2 Tbsp olive oil

  • ½ onion, diced

  • 2 large carrots, diced

  • 2 celery sticks, diced

  • 2 tsp grated fresh ginger

  • 4 mushrooms, sliced

  • 1 small zucchini, diced

  • 1 cup frozen peas

  • 2 cups sliced Savoy cabbage

  • 3 Tbsp tamari

  • ½ tsp sea salt

  • 1/8 tsp pepper

  • 1 avocado

  • 1 cucumber

  • ½ pt cherry tomatoes

Instructions

Place chopped cauliflower in a food processor fitted with the ‘s’ blade. Pulse until cauliflower is broken down into tiny rice-like pieces; set aside. Heat oil in a wok. Add onion, carrots, celery and ginger and sauté 5 minutes. Add mushrooms and zucchini; sauté 2 minutes. Add cauliflower and sauté 7 minutes. Add remaining ingredients and sauté a few minutes more. Taste and adjust salt, pepper and tamari.

Slice avocado, cut cucumber into spears, plate cherry tomatoes and serve alongside Cauliflower Fried “Rice”. Reheat Delicata Squash filling and serve.
