DAY 4: Chef Salad, Root Vegetable Soup, Southern Greens

Chef Salad

  • 2/3 head red leaf lettuce

  • 2 hard-boiled eggs, sliced

  • 1 slice ham, cut into ¼” x 2” strips

  • 1/4# cheddar cheese, cubed

  • 1 carrot, sliced

  • ½ cucumber, sliced

  • ½ cup green olives, chopped

  • 1 stick celery, sliced

  • 2 mushrooms, sliced

  • ½ pt cherry tomatoes, halved

  • ½ can garbanzo beans

  • Salad dressing

Instructions

Make 2 individual salads using above ingredients. Serve with your choice of salad dressing.

Reheat reserved Root Vegetable Soup, sprinkle with chives and serve.

Reheat reserved Southern Greens.
