DAY 5: Chili con Queso Casser-Olé & Green Salad

Chili con Queso Casser-Olé

  • ½ batch Veggie Chili

  • 2 cups tortilla chips

  • 1 cup cheddar cheese, shredded

  • 1 ¼ cups sour cream

  • 2 green onions, sliced

  • ½ cup black olives, sliced

Instructions

Crush tortilla chips and place ½ in the bottom of an 8×8 baking dish. Top with reserved Veggie Chili and dollops of sour cream. Sprinkle with the remaining chips and finish with the cheese. Bake at 350°F for 25 minutes. Top with green onions and black olives.

Make green salad with ½ head of lettuce and ½ cucumber

Save for later: 2 green onions and lettuce for Falafel Salad.
