  • 1/2 cup packed pitted Medjool dates

  • 1/4 cup hot water

  • 1/4 cup coconut oil

  • 1/4 cup honey

  • 1/4 cup ground flax seeds

  • 2 tsp vanilla

  • 1 cup almond butter

  • 1 cup quinoa flakes

  • 1/2 cup almond flour

  • 3/4 tsp baking soda

  • 1/4 tsp salt

  • 1/2 cup chocolate chips

Instructions

1. Preheat oven to 350.
2. Place pitted dates and hot water in a blender; soak for 5 minutes.
3. Add coconut oil and honey.
4. Blend until very smooth.
5. Transfer mixture to a mixing bowl; add ground flax seeds and vanilla.
6. Beat on high with electric mixer until combined.
7. Add remaining ingredients and beat until well combined.
8. Drop dough by teaspoons onto a parchment paper-lined cookie sheets.
9. Bake for 10-12 minutes.
10. Transfer gently to a cooling rack.
