DAY 1: Grandé Gorditas & Roasted Corn
Grandé Gorditas
Instructions
Brown beef; add onion, garlic, jalapeno, oregano, cumin, salt and pepper to taste. Sauté until onion is translucent. Warm pita rounds in a skillet. Top with beef mixture, lettuce, cheese, green onions, salsa and Gordita Sauce. Fold in half around filling, taco style.
Tip: Wear gloves when cutting jalapeños to prevent transfer of pepper oil to skin.
Gordita Sauce
Instructions
Mix all ingredients together. Serve with Grandé Gorditas.
Roasted Corn
Instructions
Heat oil, add corn and sauté 10-12 minutes or until it starts to brown, stirring occasionally. Stir in remaining ingredients.
Save for later: 8 pita rounds, ½ lb ground beef, lettuce for Day 3 green salad, Day 4 Falafel, Day 5 green salad and Day 6 Falafel Salad, 1 ¾ cups sour cream for Day 4 Falafel and Day 5 Chili con Queso Casser-Olé, 6 green onions for Veggie Chili, Quinoa Tabouli and Chili con Queso Casser-Olé.
