  • 1 cup dry black-eyed peas

  • 4 cups water
  • 1 medium onion, diced
  • ½ pound bacon or ham, cut in ½” pieces (or 1 ham bone, cooked along with the peas)

  • 1 cup uncooked long-grain rice
  • 1 tsp salt
  • Black pepper to taste

Instructions

Place peas and water in a 2-quart covered saucepan and bring to a boil. Reduce to a simmer and cook the peas, covered, until just barely tender, about 1 hour and 45 minutes. Add additional water during the cooking process as needed to keep the peas from drying out. Drain peas, reserving the cooking liquid. Return them to the pot.

Sauté the onion along with the bacon or ham until the onion is translucent. Add to the soup pot, along with the rice and 2 ½ cups of the reserved liquid. Add remaining ingredients, cover and simmer for 15 minutes. Allow dish to rest off the heat for 10 minutes before you lift the lid and serve it. Serve with steamed collard greens, and cornbread for a traditional, good luck New Year celebration!
