Lamb Chops & Mint Sauce

Tender and flavorful lamb chops are enhanced by an aromatic and creamy yogurt-based mint sauce.

  • 6 lamb chops or lamb shoulder steaks

  • ¼ tsp. salt (or more to taste), divided

  • Fresh ground pepper to taste

  • 2 Tbsp. olive oil

  • Yogurt-Mint Sauce:

  • ½ cup fresh mint leaves, chopped

  • ½ cup plain yogurt

  • 2 green onions, chopped

  • ³⁄4 tsp. dill weed

  • 1 Tbsp. minced fresh dill

  • 1 garlic clove, minced

  • 2 tsp. fresh lemon juice

  • pinch of salt

Instructions

Yogurt-Mint Sauce: mix all ingredients and refrigerate until ready to serve.

Lamb: Rinse lamb chops and pat dry; season with half the salt and pepper. Heat oil in a large skillet.  Add chops and cook for 6 minutes; turn, season with remaining salt and pepper, cook for 6 minutes more. Top with Yogurt-Mint Sauce and serve.
