Maple-Glazed Delicata Squash

Sweet and savory with all the flavors of fall.

  • 2 lb delicata squash

  • 2 Tbsp. olive oil, divided

  • 1/4 tsp salt

  • 1 tsp chopped fresh rosemary

  • 1 Tbsp. maple syrup

  • 1 Tbsp Dijon mustard

Instructions

1. Preheat oven to 425.
2. Cut squash in half lengthwise, scoop out seeds, then cut into 1/2″ slices.
3. Toss with 1 Tbsp oil and salt in a large bowl.
4. Spread in an even layer on a baking sheet.
5. Roast, stirring once or twice, until tender and beginning to brown, about 30 minutes.
6. Combine remaining ingredients in a small bowl. Toss squash with dressing.
7. Roast an additional 5-8 minutes.
