DAY 5: Meatball Sandwich, Red Bell Pepper Slices & Kale Chips

Meatball Sandwich (and sides)

  • Leftover meatballs and sauce from Day 1

  • 1 Ciabatta roll, sliced in half

  • 2 pats butter

  • 1/8 tsp garlic salt

  • 1 tsp Parmesan, grated

  • Leftover Kale Chips

  • ½ red bell pepper, sliced

Instructions

Spread 1 pat butter on each half of cut bread and sprinkle with a small amount of garlic salt. Broil cut sides of roll. Heat meatballs and sauce, if desired. Make a sandwich with meatballs, sauce, and Parmesan. Serve with leftover Kale Chips and ½ red bell pepper, sliced.
