DAY 2: Mom’s Meatloaf, Mashed Potatoes & Green Beans

Mom’s Meatloaf

  • 1 lb ground beef

  • ½ onion, diced

  • ½ cup celery, diced

  • 1 cup oats

  • ¾ tsp sea salt

  • 1 egg

  • ¼ cup ketchup

  • ¼ cup brown sugar

Instructions

Mix ground beef, onion, celery, oats, salt and egg. Form into a loaf and place in a loaf pan. Cover and bake at 350°F for 45 minutes. Mix ketchup and brown sugar. Spread over top of meat loaf; bake, uncovered, 15 minutes or until cooked through. Let stand 5-10 minutes for easier slicing. Leftovers make delicious sandwiches!

Mashed Potatoes

  • 3 lbs potatoes, peeled and quartered

  • 4 oz cream cheese, softened

  • ½ cup sour cream

  • ¼ cup milk

  • 3 Tbsp butter

  • 1 tsp sea salt

  • 2 Tbsp butter, melted

  • 1 tsp paprika

Instructions

Cook potatoes in boiling water 15 minutes or until tender; drain and mash with electric mixer. Add cream cheese, sour cream, milk, butter and salt; beat at medium speed until smooth. Remove half and save for Shepherd’s Pie. Spoon remaining potatoes into a greased 8×8 baking dish. Brush with melted butter and sprinkle with paprika. Heat 30 minutes in 350°F oven.

 

Green Beans

Instructions

Heat green beans in a small saucepan; drain, add 1Tbsp butter and stir.

Save for later: 1 lb ground beef, ½ recipe Mashed Potatoes, 1 can green beans.
