DAY 1: Pan-fried Falafel, Steamed Rice, and Green Salad

Pan-fried Falafel

  • ¾ cup falafel mix

  • ½ cup water

  • 1/3 cup cheddar cheese, grated

  • Olive oil

  • Lemon wedges

Instructions

Mix falafel and water, let stand 15 minutes. If it is too dry to hold together add a little water until it forms a ball. Stir in grated cheese. Heat oil in a large skillet. Drop spoonfuls of falafel into pan, then flatten. Cook over medium heat until golden brown, 3-4 minutes. Turn and cook second side. Serve with lemon wedges, green salad reserved from Day 1, and Co-op Kitchen Classic Hummus.

Steamed Rice

  • 1 cup rice

  • 2 cups water

  • ½ tsp. sea salt

Instructions

Rinse 1 cup rice 3-4 times, draining water when it becomes murky. Place in saucepan with 2 cups water and ½ tsp. sea salt. Bring to boil; cover and simmer 20-25 minutes. Set aside 2 cups for Chicken & Rice Salad. Serve remaining rice with butter.
