DAY 6: Potato Corn Chowder, Crackers, Sesame Glazed Carrots

Potato Corn Chowder

  • 2 Tbsp butter

  • 1 ham slice, cubed

  • ½ onion, diced

  • 1 carrot, diced

  • 1 baked potato, diced

  • 1 cup hot water

  • 1 Tbsp veggie broth powder

  • 1 cup corn

  • 1 cup milk

  • Salt & pepper

  • 1 tsp dried dill

  • Cheddar cheese for garnish

Instructions

Sauté ham, onion and carrot in butter. Add baked potato, hot water, broth powder and corn. Bring to a simmer and cook until thickened, about 10 min. Remove from heat and slowly stir in milk. Heat, but do not boil. Season with dill, salt and pepper, to taste.
