DAY 1: Rice Noodles with Peanut Sauce and Green Beans

Rice Noodles with Peanut Sauce

  • 8 oz rice noodles
  • 1 Tbsp olive oil

  • 1 medium carrot, julienned

  • 1 zucchini, julienned

  • 4 green onions, julienned

  • 2 cloves garlic, pressed

  • ½ head cabbage, shredded

  • ¾ cup hot water

  • 2¼ tsp broth powder

  • 6 Tbsp peanut butter

  • 1½ Tbsp tamari

  • 1 tsp red pepper flakes

  • 1 Tbsp honey

  • ½ cup cilantro, chopped

Instructions

Cook rice noodles according to package instructions. Drain and rinse with cold water. Sauté carrot, zucchini and green onions 1 minute in oil. Add garlic and cabbage, cover pan, and cook 3 minutes. Mix hot water and broth powder, until powder is dissolved. Add nut butter, tamari, red pepper flakes, and honey. Stir. Add sauce and noodles to vegetables; stir and heat. Garnish with cilantro.

Green Beans

Instructions

Steam ½ lb green beans in salted water for 10 minutes or to desired finish.
