DAY 4: Salmon Lettuce Wraps, Deep Dish Bake, Sugar Snap Peas, Celery with Peanut Butter & Raisins

Salmon Lettuce Wraps

  • Leftover Salmon and Veggie Stir-fry with Steamed Rice from Day 2

  • 2 Romaine lettuce leaves

  • ½ lime

Instructions

Wash and dry lettuce leaves. Warm Salmon and Veggie Stir-fry with Steamed Rice, if desired. Place stir-fry evenly on lettuce leaves. Squeeze lime juice over the top. Fold lettuce over filling, taco style.

 

Veggie Sides

  • Leftover Deep Dish Bake, reheated

  • 1 cup sugar snap peas

  • 1 stick celery

  • ¼ cup peanut butter

  • 12 raisins

Instructions

To make celery and peanut butter, cut celery into 3-4” pieces and fill with peanut butter. Distribute raisins over top, if desired.
