DAY 1: Salmon Tacos, Seasoned Black Beans, Green Salad

Salmon Tacos

  • 4 slices bacon

  • 4 salmon burgers

  • 6 corn tortillas

  • 1 cup shredded cabbage

  • ½ cup salsa

  • ¼ cup sour cream

Instructions

Fry bacon to desired finish; drain and crumble. Gently heat salmon in a skillet over medium heat; cubed. Set ½ aside for Salmon Melts. Wrap tortillas in foil and heat in 350°F oven for 10 minutes or place in microwave, without foil, for 30 seconds. Distribute ingredients over warmed corn tortillas. Fold in half taco style.

Seasoned Black Beans

  • 1 can black beans

  • ½ tsp ground cumin

  • 1 tsp chili powder

  • 2 Tbsp cilantro, chopped

Instructions

Combine all ingredients in a saucepan. Simmer gently for 15-20 minutes.

Make salad with 1 head lettuce, 2 carrots, ½ green bell pepper and ½ cucumber. Reserve ½ for Day 6.
