DAY 4: Shepherd's Pie & Green Salad

Shepherd’s Pie

  • ½ lb ground beef

  • 1 Tbsp olive oil

  • ½ onion, diced

  • 1½ cups carrots, cooked

  • 1 can green beans, drained

  • Stroganoff reserved from Day 4

  • Mashed Potatoes reserved from Day 2

Instructions

Brown ground beef; drain and set aside. Sauté onion in olive oil, 3-4 minutes, until soft. Add meat, veggies and sauce. Stir well and heat to boiling. Heat potatoes to reach a softer consistency. Pour beef mixture into casserole. Spread potatoes over top. Bake at 350°F, 15-20 minutes until potatoes are lightly browned.

Green Salad

Instructions

Make salad with 1 head lettuce and 1 cucumber. Save ½ for Day 6.
